This is one of those great slow cooker chicken recipes that has the house smelling absolutely divine while it is cooking. Not many people are really sure what a fricassee is. There are so many variations on a fricassee. It really is an umbrella under which many stewing recipes fall. Years ago, many fricassee recipes were made using chickens and rabbits. One old recipe of mine says, “Skin the rabbits – but not the chickens”. I don’t even want to think about that. I used to have a gorgeous lop-eared rabbit named Tiffany. She was a feisty little critter and she used to chase our St. Bernard around the yard! …But I digress. Let’s get back to the subject of slow cooker chicken recipes.
In your slow cooker, place 4 boneless skinless chicken pieces. On top of that place a small chopped onion. Now mix together a can of cream of chicken soup, a cup of water, and one teaspoon each of paprika, rosemary, thyme, lemon juice and salt. Give this about 7 grinds of fresh black pepper and pour it all over the chicken. Cook on low for about 7 hours. I love to serve this with mashed potatoes or noodles, but if you want you can add some homemade dumplings during the last 90 minutes.
All you do is mix together 1 1/2 cups of flour, 2 teaspoon of baking powder and 3/4 teaspoons of salt. We love pepper, so I give this a few grinds of black pepper, too. Now incorporate 3 tablespoons of shortening and add chopped chives and 3/4 cup of milk. Drop these by spoonfuls into the slow cooker. Just don’t make them too big or they will be doughy.
