I made one of the baked chicken recipes that I have been meaning to try for a while and it was so outrageously delicious that I just had to share it with you. I messed up when I bought my chicken because I inadvertently bought boneless chicken breasts when the recipe called for Bone-In chicken. However, these breast halves were so HUGE that I followed the recipe as written, including baking time, and it turned out moist and zesty!

I have a favorite easy chicken recipe that uses Hoisin sauce. Have you ever tasted the wonderful Asian Hoisin sauce? Well, if you have tasted Peking Duck or Mu Shu Pork or spring rolls, you have probably tasted hoisin sauce. The word “Hoisin” is derived from the Chinese word for “seafood” – but it does not contain any seafood. Used primarily in Cantonese cooking, this sauce is thick and sweet and a bit pungent.

I like to use buttermilk in a lot of my baked chicken recipes. It always surprises me when people comment that I’m brave to use buttermilk! So many people have the notion that buttermilk is high in fat – but it is not! Originally, buttermilk was called such because it was the liquid that was leftover after churning butter. Today, buttermilk is made with 2% milk and a lactic acid bacteria is added. Buttermilk today actually contains more calcium, protein and vitamins than it did way back when.

I just love Oriental honey chicken recipes. Years ago when I lived in LA, I used to love to go to Chinatown. I loved to see the Peking ducks hanging in the windows and smell all the wonderful smells. My business partners and I would often go for Dim Sum at lunch time and what a treat that was. Everything was one dollar! They would bring around the carts and we would just point at what we wanted. I’m always reminded of those happy times when I make this recipe. The honey and soy give the chicken a glazed mahogany color reminiscent of many dishes in Chinatown. Since the flavors are definitely Oriental, I like to make some sort of special rice with this. I like to dress it up with some golden raisins, toasted almonds, green onions – whatever sounds good on that day.

There’s not much better comfort food than a whole chicken recipe - and this is one that is super easy and out of this world delicious! The key to this – and all other whole chicken recipes, in my opinion – is the blast of high heat that the chicken gets when it goes in the oven. This automatically starts crisping up the skin which in turn keeps all the juices inside the bird.

The domesticated chickens were first raised somewhere in the northern parts of India. In the United States, chicken consumption increased dramatically during the second world war because beef and pork were in short supply.
