When I saw that over 7000 people a day search for the chicken gourmet recipe Chicken Makhani or Indian Butter Chicken, I knew that I had to try it. Although these two versions are not technically a baked chicken recipe, I had to include them because they are both such chicken gourmet delights!
You can adjust the cayenne to make it as spicy or as mild as you like. You can also vary the heat of this dish with the hotness of the chili powder that you use. The recipe is thought to have originated around the area of Delhi in India during the Mughal Empire. The chicken gourmet recipes for Makhani vary from one place to the next – even in India! Chicken Makhani can be done in the pan, as these versions are, but it can also be grilled or roasted in the oven. Although this dish is similar to chicken tikka masala, it is much richer. It is most often served with some of the wonderful Indian flat bread called naan and some nice fluffy Basmati rice.
It is important to marinate the chicken overnight for full flavor. Some recipes recommend thickening the sauce at the end with cashew nut paste, but I find it is just fine without it. Don’t be tempted to skimp on adding the butter and cream at the end. This is all a part of what makes this dish so special – and why it is called “Butter Chicken“.
