If you are thinking of making a honey chicken recipe, why not try something out of the ordinary? Roasted Chicken with Honey-Rum Glaze, or Pollo Asado. This is a very easy chicken recipe. You will take a 3 1/2 pound chicken and rub it all over – inside and out – with adobo. Are you familiar with adobo? Actually, adobo can traditionally be either wet or dry. The wet version is a rub made by mixing together garlic and olive oil, oregano, citrus juices, salt and pepper, and perhaps a bit of vinegar. Marinating the chicken in this mixture overnight will produce a marvelous roast chicken the following day.

If I had to pick my favorite boneless chicken recipe, it would have to be Chicken Parmigiana. I never knew exactly what the name referred to. I assumed it either referred to Parma, Italy – where perhaps the dish was created – or to the fact that one of the ingredients is Parmesan cheese. Well, I found I was wrong on both counts. The dish was created outside of Italy and the name does not refer to the cheese. According to author Anna Pomar, the name derives from a Sicilian word – parmiciana. This refers to the center part of a window shutter where the slats of wood overlap. It seems that the first “Parmigiana” recipe used eggplant and the slices were placed in the pan overlapping each other.

A healthy chicken recipe for Buffalo wings? Who doesn’t love Buffalo wings. These things are so crazy popular that Pizza Hut and Domino’s even have them on their menu. It is almost an American tradition to have Buffalo wings at a Super Bowl party.

Chicken Cordon Bleu is a fabulous dish that is not as difficult to make as some people think. However, it does take some time and not everyone enjoys pounding out chicken and trying to seal the ham and cheese inside with toothpicks, etc. I was thrilled a few years ago to find this chicken casserole recipe for Chicken Cordon Bleu.

A chicken casserole of Chicken Divan always brings a smile to my family’s faces. What’s not to like about a creamy white sauce with freshly steamed broccoli and tender white chicken?
I always wondered where this dish got its name. It turns out it is named after a New York restaurant that was around in the 1950’s. It was in the New York Chatham Hotel on East 48th Street in New York City. The name of the restaurant was Divan Parisien. Divan in French means “meeting place”, so the owner was obviously going for a feel of an elegant place to meet and dine on continental cuisine!

Well, it’s hard to believe, but we are just a month away from Super Bowl 2010! It’s coming up February 7th in Miami. I thought I would pass along one of the baked chicken recipes I always make for Super Bowl – Betty White’s Mahogany Chicken Wings. These are absolutely sticky, messy and out of this world delish! They always fly off the platter. I’ve even served these at room temperature and they are just as good.
