Baked Chicken Recipes

It seems like everyone is looking for healthy chicken recipes these days.  Sometimes I cringe at baked chicken recipes that call for boneless, skinless chicken breasts that are slightly seasoned and baked in the oven.  I know that the chicken is likely to be dry and not too favorful.  Since this cut of chicken is very low in fat, it can also be less flavorful than other cuts or breasts with the bone in.

So how do we keep from ending up with dry, tough, not very flavorful chicken?  The easiest way is to macerate or marinate the chicken while you are off doing other things.  So what exactly is a marinade?

I make this lemon chicken recipe using Panko crumbs.  Until recently, Panko crumbs were not easy to find in all grocery stores and they could be ridiculously expensive – considering all they are is airy bread crumbs without the crust that has been dried, but not toasted.  It has traditionally been used in Japanese and French cooking, but now that Progresso has finally come out with Panko in a box – we can use it for many types of dishes.
